The manual harvest of the ripe beans is made discarding the mould beans, dry, vain and ripe beans; to guarantee this process the technical department is in charge of the monitoring and controls by means of chats in the properties of our partners involving the participation of the workers.
Once harvested the coffee beans are brought to our benefit plants for their processing, beginning with the weight control and t he first quality control by means of the flotation of the imperfect coffee.
They are made with technologically machines, previously they were inspected by the technical personnel; these machines make the classification of the perfect beans using low levels of clean water, the remainders which are very rich in nutrients are suitably stored, then they are converted in organic fertilizer (humus).
It is made during 13 to 17 hours, depending on the level of the environmental temperature. It is possible to indicate that the time of fermentation is only a reference because our personnel evaluate permanently this process, key process in order to obtain a quality coffee.
The washing of beans is made with the use of clean and crystalline water, taken of the best springs, transferred by means of conduits of PVC until the plant in order to guarantee their purity.
Once the beans are carefully washed , they are taken to concrete troughs or wood stands, for their drying by natural heat until obtaining a uniform humidity of 12%.
